Creamy Avocado Dressing / Sauce [Dairy free, Gluten Free, Grains Free, Paleo, Sugar Free,Vegan]
Looking at ways to enjoy avocado, besides guacamole which is my default in avocado eating, next to an chilli chocolate mousse or an avocado chocolate mousse which are dessert options, I searched through various green goddess dressing recipes, as the avocado dressing recipes are known as, which includes egg based mayonnaise and anchovy fillets. In particular, I was looking for a strictly vegetarian recipe and came across one that was easily adaptable and did not include mayonnaise, but the technique for making it is similar to that of mayonnaise making.
With an adjustment of a few ingredients to my liking, including fresh herbs, this delightful and refreshing avocado dressing or sauce evolved. Using to add flavour to bland veggies or meat protein, or simply eaten on its own, this zesty avo dressing is very easy to make, with simple ingredients too.

The ingredient listing below adds anchovies as an optional extra for those who want to try the full Green Goddess dressing version. The fresh herbs may be adjusted to suit individual tastes.
A must make for avocado lovers, the dressing / sauce may be used as a salad dressing too, and is a fabulous accompaniment to eggs, boiled, over an omelette or scrambled.
1 medium sized ripe avocado, pitted and peel removed
3 tblsp freshly squeezèd lemon juice
3 tblsp coconut milk (sugar free)
½ cup Italian parsley, chopped
3 tblsp basil, chopped
1 clove garlic, minced
¼ tsp Himalayan or Sea Salt
Freshly milled black pepper, to taste
½ cup extra virgin olive oil
Optional: 2-3 anchovy fillets, finely chopped and added to the ingredients for blending before the olive oil, for a non-vegan dressing
- Add all the ingredients, except the olive oil into a blender or food processor or the bowl of an Immersion / Stick blender unit and blend them until they are well combined and the fresh herbs have been finely reduced.
- While the blender or food processor is still running, slowly pour in the olive oil and allow the mixture to combine and thicken. You will have a sauce the consistency of mayonnaise.
- Pour into a well sealed glass jar and store in the refrigerator. This dressing stores well for up to 5 days.
- Serve chilled over a salad, or veggies as preferred.
