Chilli-Lime Chicken [Dairy free, Gluten free, Grain free, Sugar free]

This is an amazing, flavoursome and zesty grilled chicken recipe that takes the boring out of baked or grilled chicken.

The blend of the chilli and the dried herbs permeate this chicken beautifully  – ideally, the chicken should be allowed to marinate in the spice and lime juice blend overnight.  I found that any time less than 3 hours does not bring out the flavours as overnight soaking does.  While the chicken may be oven grilled, easiest for me is grilling on a grill pan or an electric grill as this allows for convenient basting while the chicken cooks.  I used chicken thighs for this recipe, but chicken breasts will absorb the marinade well too.  The spice ingredients may be altered and adjusted to suit individual tastes but retain the lime juice and olive oil for grilled chicken that is tangy and tasty too!

Ingredients

5-6 small chicken thighs or equi-weight chicken breasts

Freshly squeezed juice of 4 limes

2 tblsp extra virgin olive oil

2 tblsp chilli powder

1 tsp cumin powder

1 tsp dried origanum

1 tsp dried sage

Himalayan or Sea salt and freshly ground pepper to taste

 

Here’s How

  • Combine all the above ingredients except the chicken in a bowl and mix well

  • Add the chicken to a shallow dish and pour the marinade over covering all the chicken and cover with clingwrap.

  • Place in the refrigerator for at least 3 hours but up to 36 hours
  • When ready to cook, remove the chicken from the refrigerator and allow it come to room temperature
  • Remove the chicken from the marinade ont0 a plate and pour your marinade into a pan
  • Heat the marinade on the stove top and bring to a boil and then reduce to a simmer for 10 minutes until it thickens up so you can baste the chicken while it cooksIMG_0785
  • Preheat your  grill pan or electric grill on medium heat setting, then go cook the chicken.  This should take about 10 minutes per side
  • While the chicken is cooking keep basting it with the marinade reduction
  • Cook until done.IMG_0788
  • Serve with vegetable and/or salad of choice and Enjoy :)
