Oven Roasted Butternut

 
I started growing bored with roasting my butternut with cinnamon and paprika, salt and pepper and decided to put an Indian “curry” flavour to it – and wanted to experiment with the flavours.  I am glad I did, as the spice mix brings out the nutty and sweet flavour of the butternut superbly.
 
 
 
Ingredients
 
  • 200g diced butternut 
  • 1-2 tbs olive oil (or ghee or coconut oil)
  • 1/4 tsp coriander powder
  • 1/4 tsp cumin powder
  • 1/4 tsp chilli powder OR cayenne pepper
  • 1/4 tsp freshly ground black pepper
  • a pinch of turmeric (optional)
  • 1 tsp salt
 
Here’s How
 
  • Preheat oven at 180 degrees celcius.  
  • Add diced butternut into a deep dish and toss cubes with oil and spices.
  • Transfer to oven proof dish and bake for about 40 -50 minutes, tossing the cubes at least once during the roasting.
  • Serve with with your choice of protein and a salad.
