Prawn Curry (A Regte Durbs one!)

Came across this recipe from the online archives of my meals – couldn’t believe I ate so much then….3 Reboots later, I eat half this quantity!!! 
 
Prawn Curry Served with Cauliflower Rice
(Reboot 1 Dinner)
 

Ingredients


1 Tblsp organic cold pressed coconut oil
3 cloves fresh crushed garlic
1/2 onion finely chopped
1 small grated tomato
1/2 tsp pure chilli powder
1/2 tsp cumin powder
1/2 tsp coriander powder
Handful of chopped fresh coriander

10-15 shelled and deveined prawns
Optional 1tblsp freshly squeezed lemon juice
Optional finely sliced green chilli

Here’s How

  • Heat coconut oil in a saucepan
  • Saute onion and garlic over low heat until tender
  • Add tomatoes, chilli, cumin and coriander powders and simmer for 5 minutes
  • Add cleaned deveined prawns to simmering curry sauce and cook for 10 minutes until cooked through
  • Stir in Fresh coriander
  • If required add the juice from about half a fresh lemon

Serve with steamed cauliflower rice.
